Why is garlic high FODMAP?
Garlic is rich in fructans, a type of oligosaccharide (the "O" in FODMAP). Humans lack the enzymes to break down fructans, so they travel undigested to the large intestine where gut bacteria ferment them โ producing gas and drawing in water.
According to Monash University, garlic becomes high FODMAP at just 1 clove (3g). Garlic powder is also high FODMAP โ dehydration concentrates the fructans further.
The good news: fructans are water-soluble but not oil-soluble. Garlic-infused oil is safe because the flavour transfers to the oil while the fructans stay in the garlic solids.
